Ingredients
- 2 tablespoons Unsalted Butter
- 4 ounces Cream Cheese
- 1/4 cup Heavy Whipping Cream
- 1 cup Shredded Cheddar Cheese
- 1 pound Ground Beef
- 2 tablespoons Taco Seasoning
- 4 Low-Carb Tortillas
- 1 cup Sour Cream
- 1 cup Shredded Lettuce
- 1 medium Tomato
- 1 cup Extra Cheddar Cheese
- 1/4 cup Cilantro
- 1/2 cup Jalapeño Slices (optional)
- 1 tablespoon Olive Oil
Instructions
- Melt butter in a small saucepan over low heat, then add cream cheese in chunks until smooth.
- Pour in heavy whipping cream and whisk until silky, then add shredded cheddar until melted and glossy.
- In a skillet over medium-high heat, cook ground beef until brown, adding taco seasoning and splash of water to mix.
- Toast each low-carb tortilla in a skillet for about 30 seconds on each side, then stack them warm.
- For assembly, lay a tortilla flat, add cheese sauce, beef, extra cheddar, jalapeños, lettuce, and tomato, then fold tightly.
- Cook the seam side down in a skillet until golden and crispy, about 2 to 3 minutes per side.
- Serve with sour cream, garnish with cilantro, and enjoy while warm.
Notes
For dairy-free options, use vegan cream cheese and plant-based cheddar. Customize with vegetables like bell peppers instead of tomatoes for lower carbs.
