Ingredients
- 1 pound of cauliflower, riced
- 1 cup of shredded cheese (cheddar or mozzarella)
- 1/2 cup of cream cheese
- 1 cup of cooked shredded chicken or turkey
- 2 cups of spinach, chopped
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of onion powder
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Fresh herbs for garnish
Instructions
- Prepare the Cauliflower: Start by ricing the cauliflower using a food processor or box grater.
- Sauté the Vegetables: Heat olive oil in a large frying pan over medium heat, add riced cauliflower, and cook for about 5 minutes until tender.
- Mix in the Cream Cheese: Lower heat and stir in cream cheese until smooth.
- Add the Chicken: Stir in the shredded chicken or turkey until well combined.
- Incorporate Spinach and Seasoning: Fold in chopped spinach, garlic powder, onion powder, salt, and pepper until the spinach wilts.
- Finish with Cheese: Sprinkle shredded cheese over the mixture, cover, and allow to sit on low heat until cheese melts.
