A comforting one-pot Jambalaya that’s quick and packed with flavor, perfect for busy families.
Ingredients
- 1 pound chicken, diced
- 1 pound sausage, sliced
- 1 pound shrimp, peeled and deveined
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 cups long grain rice
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 teaspoons Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and sausage, cooking until browned.
- Add onion, bell pepper, celery, and garlic; sauté until tender.
- Stir in rice, broth, tomatoes, Cajun seasoning, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes.
- Add shrimp in the last 5 minutes of cooking.
- Fluff with a fork and garnish with green onions before serving.
Notes
For enhanced flavor, brown the meat well and watch the garlic to avoid burning. Adjust salt for lower sodium.
