Ingredients
- 1 pound Italian sausage
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups fresh spinach
- 1 package (9 oz) cheese tortellini
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Drain excess fat.
- Add the diced onion and minced garlic, cooking until the onion is translucent and fragrant.
- Stir in the chicken broth and canned tomatoes, bringing the mixture to a boil.
- Add the tortellini, and cook according to package instructions until tender.
