Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened.
- Stir in diced carrots and celery, cook for an additional 5 minutes.
- Pour in vegetable broth and canned tomatoes.
- Add oregano, thyme, salt, and pepper.
- Bring to a boil, reduce heat, and let simmer for 20-30 minutes.
- Adjust seasoning if needed and serve warm, garnished with fresh parsley.
Notes
For a richer flavor, add a splash of balsamic vinegar just before serving. You can also customize with seasonal vegetables or pasta.
