  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Stir in diced carrots and celery, cook for an additional 5 minutes.
  4. Pour in vegetable broth and canned tomatoes.
  5. Add oregano, thyme, salt, and pepper.
