  • Salt and pepper to taste
  • 1 cup cooked white beans (optional)


Instructions

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until the vegetables are softened.
  3. Add the minced garlic and thyme, stirring until fragrant.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let simmer for about 15 minutes.
