Ingredients
- 2 cups vegetable broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup spinach or kale
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup cooked white beans (optional)
Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion, carrots, and celery, and sauté until the vegetables are softened.
- Add the minced garlic and thyme, stirring until fragrant.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let simmer for about 15 minutes.
- Add the spinach or kale and cooked white beans, if using.
- Season with salt and pepper to taste.
- Cook for an additional 5 minutes, then serve warm.
