A comforting and nutritious Italian Chicken Meatloaf that’s perfect for busy families, packed with flavor and love.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup chopped parsley
  • 1 egg
  • 1/2 cup marinara sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup marinara sauce for topping
  • Extra breadcrumbs for topping


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, parsley, egg, garlic powder, onion powder, salt, and pepper.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
  4. Spread the marinara sauce over the top of the meatloaf.
  5. If desired, sprinkle additional breadcrumbs on top for a crispy texture.
  6. Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let it rest for 10 minutes before slicing and serving.

Notes

Can be personalized with fresh herbs or spices. Leftovers can be stored in an airtight container for up to four days.
