A heartwarming family recipe that combines tender chicken, savory rice, and a hint of sweetness for a nourishing meal.
Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Let it sit.
- Heat a skillet over medium heat, add oil and sear the chicken for 3–4 minutes on each side until golden brown. Remove and set aside.
- In a bowl, mix together BBQ sauce, honey, soy sauce, and minced garlic until smooth.
- In the same pan, add more oil if needed and toast the rice for 1–2 minutes, stirring frequently.
- Pour in the chicken broth and half of the BBQ sauce mixture. Stir to combine.
- Nestle the chicken back in and pour the remaining sauce on top.
- Cover and simmer on low for 15 minutes.
- Add mixed vegetables (if using) and cook for an additional 5 minutes.
- Let it rest for 5 minutes before serving. Garnish with chopped green onions.

Storage: Cool to room temperature, store in airtight containers for up to 3 days in the fridge or freeze for up to 3 months.
