Description

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish


Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Let it sit.
  2. Heat a skillet over medium heat, add oil and sear the chicken for 3–4 minutes on each side until golden brown. Remove and set aside.
  3. In a bowl, mix together BBQ sauce, honey, soy sauce, and minced garlic until smooth.
  4. In the same pan, add more oil if needed and toast the rice for 1–2 minutes, stirring frequently.
  5. Pour in the chicken broth and half of the BBQ sauce mixture. Stir to combine.
  6. Nestle the chicken back in and pour the remaining sauce on top.
  7. Cover and simmer on low for 15 minutes.
  8. Add mixed vegetables (if using) and cook for an additional 5 minutes.
  9. Let it rest for 5 minutes before serving. Garnish with chopped green onions.

Notes

Storage: Cool to room temperature, store in airtight containers for up to 3 days in the fridge or freeze for up to 3 months.
