Quick and nutritious mini muffins combining pancakes and sausage, perfect for busy mornings.


Ingredients

  • 2 cups Kodiak pancake mix (or other protein pancake mix)
  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk (try Fairlife for extra protein)
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)


Instructions

  1. Preheat oven to 400°F (200°C) and spray a mini muffin tin with nonstick spray.
  2. In a bowl, whisk together pancake mix, milk, eggs, and maple syrup until smooth.
  3. Fold in the cooked sausage and shredded cheese.
  4. Fill each muffin cup ¾ full with the batter.
  5. Bake for 15 minutes or until golden and firm.
  6. Cool a few minutes before serving.

Notes
