A heartwarming blend of pancakes and sausage in mini muffin form, perfect for family breakfasts.
Ingredients
- 2 cups Kodiak pancake mix (or any protein pancake mix)
- 1 lb ground sausage, browned and crumbled
- 2 cups milk
- 2 eggs
- ¼ cup maple syrup
- 1 cup shredded cheese (cheddar or Colby Jack)
Instructions
- Preheat your oven to 400°F (200°C). Spray mini muffin tin with non-stick spray.
- In a large bowl, whisk together pancake mix, milk, eggs, and maple syrup until smooth.
- Gently fold in cooked sausage and shredded cheese.
- Fill each muffin cup about ¾ full with batter.
- Bake for about 15 minutes until golden brown and firm to the touch.
- Remove from oven and let cool for a few minutes before serving or storing.
Notes
These muffins can be stored in the fridge for up to four days or frozen for up to three months. Reheat before serving.
