Description

A heartwarming blend of pancakes and sausage in mini muffin form, perfect for family breakfasts.


Ingredients

  • 2 cups Kodiak pancake mix (or any protein pancake mix)
  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby Jack)


Instructions

  1. Preheat your oven to 400°F (200°C). Spray mini muffin tin with non-stick spray.
  2. In a large bowl, whisk together pancake mix, milk, eggs, and maple syrup until smooth.
  3. Gently fold in cooked sausage and shredded cheese.
  4. Fill each muffin cup about ¾ full with batter.
  5. Bake for about 15 minutes until golden brown and firm to the touch.
  6. Remove from oven and let cool for a few minutes before serving or storing.

Notes
