A comforting and hearty lasagna-inspired soup packed with protein, perfect for busy families.
Ingredients
- 1 lb ground turkey or chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground turkey or chicken over medium heat. Break the meat into small pieces with a spatula for even cooking.
- Add the diced onion and minced garlic, cooking until the onion is translucent. Stir constantly for a minute to prevent the garlic from burning.
- Stir in the crushed tomatoes and broth, bringing the mixture to a boil. Use a wooden spoon to scrape any browned bits from the bottom for added flavor.
- Add the broken lasagna noodles, Italian seasoning, and season with salt and pepper.
- Lower the heat and let it simmer for about 15 minutes until the noodles are cooked. Stir occasionally to prevent sticking.
- Stir in the ricotta cheese and half of the mozzarella cheese until melted and combined. If too thick, add a splash of broth.
- Serve the soup in bowls, topped with the remaining mozzarella and Parmesan cheese, optionally briefly broiling for a gratin finish.
Notes
Use fresh basil for extra flavor and consider using low-sodium broth for better salt control. This soup is also freezer-friendly.
