Ingredients
- 4 large bell peppers
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh herbs (basil, parsley, thyme), chopped
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix together the ricotta, Parmesan, chopped herbs, minced garlic, salt, and pepper until creamy.
- Stuff the pepper halves generously with the ricotta mixture.
- Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with foil.
- Bake in the preheated oven for 30-35 minutes, until the peppers are tender.
- Remove the foil and bake for an additional 10 minutes to brown the tops slightly.
- Serve warm as a comforting side dish.
Notes
