A nutritious twist on the classic au gratin using spaghetti squash, perfect for family dinners.
Ingredients
- 1 medium spaghetti squash
- 1 cup shredded cheese (cheddar or a mix)
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Salt to taste
- 1 tablespoon olive oil
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Brush the inside with olive oil and sprinkle with salt and pepper. Place cut side down on a baking sheet and roast for about 30-40 minutes or until the flesh is tender.
- Once cooked, scoop out the strands of spaghetti squash and place them in a mixing bowl.
- Add the sour cream, garlic powder, black pepper, and half of the shredded cheese; stir until creamy.
- Transfer the mixture to a greased baking dish, spreading it out evenly.
- Top with the remaining cheese and sprinkle with Parmesan cheese.
- Bake in the preheated oven for 15-20 minutes or until the cheese is bubbly and golden.
- Garnish with fresh herbs if desired and serve warm.
Notes
You can customize the cheeses used, or add veggies like spinach or mushrooms for extra flavor.
