A nutritious twist on the classic au gratin using spaghetti squash, perfect for family dinners.


Ingredients

  • 1 medium spaghetti squash
  • 1 cup shredded cheese (cheddar or a mix)
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the inside with olive oil and sprinkle with salt and pepper. Place cut side down on a baking sheet and roast for about 30-40 minutes or until the flesh is tender.
  4. Once cooked, scoop out the strands of spaghetti squash and place them in a mixing bowl.
  5. Add the sour cream, garlic powder, black pepper, and half of the shredded cheese; stir until creamy.
  6. Transfer the mixture to a greased baking dish, spreading it out evenly.
  7. Top with the remaining cheese and sprinkle with Parmesan cheese.
  8. Bake in the preheated oven for 15-20 minutes or until the cheese is bubbly and golden.
  9. Garnish with fresh herbs if desired and serve warm.

Notes

You can customize the cheeses used, or add veggies like spinach or mushrooms for extra flavor.
