Description

A quick and healthy skillet dish featuring ground turkey and zucchini, perfect for busy family weeknights.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis
  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté chopped onion until soft (3-4 minutes).
  3. Add minced garlic and cook until fragrant (30 seconds).
  4. Crumble in the ground turkey and cook until browned (6-8 minutes).
  5. Prepare zucchini by slicing into half-moons and add to the skillet.
  6. Stir together and cook until zucchini starts to soften (4-5 minutes).
  7. Season with oregano, salt, black pepper, crushed red pepper flakes, and pour in chicken broth.
  8. Simmer on low for 3-4 minutes.
  9. Sprinkle grated Parmesan over the top, stir until melted.
  10. Taste for seasoning adjustments and serve immediately.

Notes

For a creamier version, fold in ricotta at the end. Can also serve over rice or pasta.
