Description
Crispy roasted baby potatoes tossed with olive oil, oregano, and topped with crumbled feta cheese for a comforting side dish.
Ingredients
- 2 pounds baby potatoes
- 1/2 cup olive oil
- 1 cup feta cheese, crumbled
- 2 teaspoons dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes.
- In a large bowl, toss the potatoes with olive oil, oregano, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for about 30-35 minutes, or until golden and crispy.
- Remove from the oven and sprinkle crumbled feta cheese over the top.
- Return to the oven for an additional 5-10 minutes until the feta is slightly melted.
- Garnish with fresh parsley, if desired, and serve warm.
Notes
Use strong olive oil for flavor. It’s recommended to dry the potatoes well after washing for extra crispness.
