Ingredients
- 2 cups cooked quinoa or rice
- 1 pound grilled chicken breast, sliced
- 1 cucumber, chopped
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 red onion, thinly sliced
- 1 cup Kalamata olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 2 cups mixed greens
- Salt and pepper to taste
- Olive oil and lemon juice for drizzling
For Tzatziki Sauce:
- 1 cup Greek yogurt
- 1 cucumber (grated and drained)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- In a large bowl, layer quinoa or rice as the base.
- Top with grilled chicken, cucumbers, tomatoes, bell pepper, red onion, olives, and feta cheese.
- In a separate bowl, mix all tzatziki sauce ingredients together until smooth.
- Drizzle olive oil and lemon juice over the bowls.
