Ingredients
- 2 cups crushed gingerbread cookies
- 8 oz cream cheese, softened
- 2 teaspoons ground ginger

- 1 cup melting chocolate (semisweet or dark)
- Festive sugar or cinnamon for garnish
Instructions
- In a bowl, mix crushed gingerbread cookies and cream cheese until well combined.
- Add ginger, cinnamon, and nutmeg, and mix until evenly distributed.
- Roll the mixture into small balls and place them on a baking sheet.
- Chill in the refrigerator until firm.
- Melt the chocolate in a microwave or double boiler.
- Dip the chilled truffles in the melted chocolate and place them back on the baking sheet.
