Instructions

  1. In a mixing bowl, combine crushed gingerbread cookies, cream cheese, ground ginger, cinnamon, and nutmeg until well blended.
  2. Roll the mixture into small balls and place them on a baking sheet.
  3. Chill the rolled truffles in the refrigerator for about 30 minutes.
  4. Dip each truffle in melted chocolate, ensuring they are evenly coated.
  5. Place back on the baking sheet and sprinkle with spice or festive sugar if desired.
  6. Allow the chocolate to set before serving.
