  • 1 lb carrots, washed and peeled
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots, then cut them into even-sized pieces.
  3. In a large bowl, toss the carrots with olive oil, minced garlic, salt, and pepper until well coated.
  4. Spread the carrots in a single layer on a baking sheet.
  5. Roast in the oven for about 20-25 minutes or until tender and lightly caramelized.
  6. Remove from the oven and sprinkle with grated Parmesan cheese.
  7. Return to the oven for an additional 5 minutes to melt the cheese.
  8. Garnish with fresh parsley before serving.
