Ingredients

  • 4 chicken breasts
  • 4 medium potatoes, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • Chopped parsley for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the diced potatoes, olive oil, garlic, salt, pepper, and Italian seasoning.
  3. Spread the mixture onto a one-pan baking tray.
  4. Place the chicken breasts on top of the potatoes and sprinkle with Parmesan cheese.
  5. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are crispy.
  6. Garnish with chopped parsley before serving.

Notes

For extra crisp, switch the oven to broil for the last 1-2 minutes. Pat the chicken dry before seasoning for better crust. Leftovers taste even better the next day.
