Description

A comforting and quick skillet dish featuring roasted cauliflower and mushrooms, infused with garlic and lemon for a bright flavor.


Ingredients

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small head cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste
  • 1 tbsp lemon juice
  • ¼ cup Parmesan cheese (optional)
  • Fresh parsley, for garnish


Instructions

  1. In a large skillet over medium heat, add olive oil and butter. Let the butter melt and the mixture warm through.
  2. Add cauliflower and cook for 5-6 minutes until slightly golden, stirring often.
  3. Add mushrooms and continue cooking for 4-5 more minutes, watching for golden edges.
  4. Stir in garlic, paprika, Italian seasoning, salt, and pepper and cook for another 2 minutes until fragrant.
  5. Drizzle with lemon juice, sprinkle with Parmesan (if using), and garnish with fresh parsley. Serve hot.

Notes

For a dairy-free option, skip the butter and Parmesan and use olive oil and nutritional yeast.
