Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 4 cups vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup zucchini, diced
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Stir in garlic, thyme, and basil, and cook for another minute.
  4. Pour in vegetable broth and canned tomatoes, and bring to a boil.
  5. Add green beans and zucchini, reduce heat, and simmer for 20-25 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

If you prefer a creamier soup, blend a portion of it and stir back in for a richer texture.
