A simple, healthy vegetable soup perfect for busy families, combining fresh vegetables with herbs for a comforting dish.
Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 4 cups vegetable broth
- 1 can (15 oz) diced tomatoes
- 1 cup green beans, chopped
- 1 cup zucchini, diced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Stir in garlic, thyme, and basil, and cook for another minute.
- Pour in vegetable broth and canned tomatoes, and bring to a boil.
- Add green beans and zucchini, reduce heat, and simmer for 20-25 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
If you prefer a creamier soup, blend a portion of it and stir back in for a richer texture.
