Description

A comforting and simple soup made with potatoes, onion, and cream, perfect for busy families.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Optional: shredded cheese for garnish


Instructions

  1. In a large pot, sauté the chopped onion until translucent in a splash of oil or butter over medium heat.
  2. Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 12-15 minutes.
  3. Use an immersion blender to puree the soup until smooth, or pulse for a bit of texture.
  4. Stir in the heavy cream and season with salt and pepper. Taste and adjust as necessary.
  5. Serve hot, topped with shredded cheese if desired.

Notes

For a dairy-free version, substitute coconut milk. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
