Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut oil (melted)
  • 2 tablespoons maple syrup
  • 1/2 cup dark chocolate (dairy-free if vegan)
  • 1/2 cup coconut cream
  • 1 teaspoon peppermint extract
  • 1 tablespoon coconut sugar (optional, for sweetness)
  • Pinch of salt


Instructions

  1. In a bowl, mix almond flour, melted coconut oil, and maple syrup to form a crumbly crust.
  2. Press the mixture firmly into the bottom of a tart pan to create an even layer.
  3. Refrigerate the crust for about 30 minutes to firm up.
  4. In a saucepan over low heat, melt the dark chocolate until smooth.
  5. In a separate bowl, mix coconut cream, peppermint extract, coconut sugar, and a pinch of salt until well combined.
  6. Once the chocolate has melted, pour it into the coconut cream mixture, stirring until creamy.
  7. Pour the chocolate filling into the chilled crust, smoothing the top with a spatula.
  8. Refrigerate for at least 2 hours or until set.
  9. Slice and serve chilled, garnished with additional peppermint leaves if desired.

Notes

Using high-quality dark chocolate elevates the tart’s flavor. Fresh peppermint leaves make a great garnish.
