Ingredients
- 1 cup almond flour
- 1/4 cup coconut oil (melted)
- 2 tablespoons maple syrup
- 1/2 cup dark chocolate (dairy-free if vegan)
- 1/2 cup coconut cream
- 1 teaspoon peppermint extract
- 1 tablespoon coconut sugar (optional, for sweetness)
- Pinch of salt
Instructions
- In a bowl, mix almond flour, melted coconut oil, and maple syrup to form a crumbly crust.
- Press the mixture firmly into the bottom of a tart pan to create an even layer.
- Refrigerate the crust for about 30 minutes to firm up.
- In a saucepan over low heat, melt the dark chocolate until smooth.
- In a separate bowl, mix coconut cream, peppermint extract, coconut sugar, and a pinch of salt until well combined.
- Once the chocolate has melted, pour it into the coconut cream mixture, stirring until creamy.
- Pour the chocolate filling into the chilled crust, smoothing the top with a spatula.
- Refrigerate for at least 2 hours or until set.
- Slice and serve chilled, garnished with additional peppermint leaves if desired.
