Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 cup spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Lemon juice (optional, for garnish)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the mushrooms, spinach, thyme, salt, and pepper.
  5. Reduce heat and let simmer for 15-20 minutes until the vegetables are tender.
  6. Taste and adjust seasoning as needed. Serve warm, with a splash of lemon juice if desired.

Notes

Use fresh basil for added flavor. This soup makes great leftovers and can be frozen for up to 3 months.
