A delightful and customizable bowl of flavored chicken, quinoa, and fresh vegetables, topped with creamy tzatziki sauce.
Ingredients
- 2 lbs chicken breast
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups cooked quinoa or rice
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup red onion, thinly sliced
- 1 cup feta cheese, crumbled
- Fresh parsley for garnish
- For Tzatziki Sauce: 1 cup Greek yogurt
- 1 cucumber (grated and drained)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- In a bowl, mix olive oil, garlic powder, onion powder, oregano, salt, and pepper. Marinate the chicken for at least 30 minutes.
- Grill or cook the chicken in a skillet over medium heat until cooked through, about 6-7 minutes per side. Let it rest before slicing.
- To make the tzatziki sauce, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, and salt in a bowl. Mix well and refrigerate until needed.
- Assemble the bowls by placing quinoa or rice at the bottom, adding sliced chicken, and topping with cherry tomatoes, cucumber, bell pepper, red onion, and feta cheese.
- Finish with a dollop of tzatziki sauce and garnish with fresh parsley. Serve immediately.
Notes
Leftovers taste delicious as flavors deepen overnight. Store components separately for best texture.
