Rich and fudgy brownie cookies that are easy to make and perfect for sharing.
Ingredients
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine melted butter, granulated sugar, and brown sugar. Mix until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips.
- Drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set but the centers are still soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra shine, brush a tiny bit of melted butter on top right after baking. These cookies can be stored in an airtight container for up to three days or frozen for three months.
