Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chocolate ganache (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Melt the butter and sugar together over medium heat. Remove from heat and let cool slightly.
  3. Whisk in the eggs and vanilla until smooth. Stir in the flour, cocoa powder, and salt until just combined.
  4. Pour the brownie batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
  5. While the brownies are baking, make the mousse by heating the cream until just boiling, then pouring it over the chocolate chips. Stir until smooth and let it cool slightly.
  6. Fold in whipped cream until fully combined.
  7. Once brownies are cooled, spread the mousse over the top and refrigerate for at least 2 hours to set.
  8. Top with chocolate ganache before serving. Cut into squares and enjoy!

Notes

Use European-style butter for a deeper flavor. This dessert can be made ahead and stored in the refrigerator for 3-4 days.
