Description
A warm and comforting chicken noodle soup made with fresh vegetables, chicken, and egg noodles, perfect for chilly evenings.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 2 cups egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery; sauté until softened, about 5 minutes.
- Stir in garlic and cook for an additional minute.
- Pour in chicken broth and bring to a boil.
- Add the shredded chicken and egg noodles; cook until noodles are tender, about 8-10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
