Ingredients
- 2 tbsp melted coconut oil, divided
- 4 cups Brussels sprouts, halved or quartered if large
- 3 large carrots, cut into batons
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1/3 tsp salt
- 1/3 tsp black pepper
- 1 tbsp maple syrup
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the melted coconut oil, smoked paprika, garlic powder, ground coriander, salt, and black pepper. Mix until it’s a smooth paste.
- Add in the Brussels sprouts and carrots. Toss them until well coated.
- Spread the vegetables onto a large baking sheet in a single layer.
- Roast in the oven for about 20-25 minutes, stirring halfway through.
- Once tender and crispy, drizzle the maple syrup over the vegetables and toss lightly to glaze.
- Return to the oven for an additional 5 minutes.
- Remove from the oven and let cool slightly before serving.
Notes
For the best flavor, choose fresh, vibrant Brussels sprouts and carrots. This recipe is adaptable; feel free to experiment with spices or add nuts for extra crunch.
