Ingredients

  • 2 tbsp melted coconut oil, divided
  • 4 cups Brussels sprouts, halved or quartered if large
  • 3 large carrots, cut into batons
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground coriander
  • 1/3 tsp salt
  • 1/3 tsp black pepper
  • 1 tbsp maple syrup


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the melted coconut oil, smoked paprika, garlic powder, ground coriander, salt, and black pepper. Mix until it’s a smooth paste.
  3. Add in the Brussels sprouts and carrots. Toss them until well coated.
  4. Spread the vegetables onto a large baking sheet in a single layer.
  5. Roast in the oven for about 20-25 minutes, stirring halfway through.
  6. Once tender and crispy, drizzle the maple syrup over the vegetables and toss lightly to glaze.
  7. Return to the oven for an additional 5 minutes.
  8. Remove from the oven and let cool slightly before serving.
