Description

A comforting and creamy vegetable soup perfect for family gatherings, full of vibrant veggies and rich flavors.


Ingredients

  • 2 cups mixed vegetables (carrots, celery, bell peppers, etc.)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Olive oil or butter for sautéing


Instructions

  1. In a large pot, heat olive oil or butter over medium heat.
  2. Add the diced onion and garlic, sauté until translucent, about 3-4 minutes.
  3. Add the mixed vegetables and cook for about 5 minutes until they’re tender.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let simmer for 10-15 minutes until vegetables are tender.
  6. Stir in the heavy cream and cheese until melted and fully combined.
  7. Season with salt and pepper to taste.
  8. Serve warm and enjoy!

Notes

For a lighter version, substitute half-and-half for heavy cream. Feel free to mix up the vegetables based on what’s in season.
