A comforting and creamy vegetable soup perfect for family gatherings, full of vibrant veggies and rich flavors.
Ingredients
- 2 cups mixed vegetables (carrots, celery, bell peppers, etc.)
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- Olive oil or butter for sautéing
Instructions
- In a large pot, heat olive oil or butter over medium heat.
- Add the diced onion and garlic, sauté until translucent, about 3-4 minutes.
- Add the mixed vegetables and cook for about 5 minutes until they’re tender.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let simmer for 10-15 minutes until vegetables are tender.
- Stir in the heavy cream and cheese until melted and fully combined.
- Season with salt and pepper to taste.
- Serve warm and enjoy!
Notes
For a lighter version, substitute half-and-half for heavy cream. Feel free to mix up the vegetables based on what’s in season.
