Ingredients

  • 12 ounces penne or rigatoni pasta
  • 2 tablespoons extra virgin olive oil
  • 2-3 cloves garlic, minced
  • 1 (28-ounce) can diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (or 1 tablespoon dried basil)
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add canned diced tomatoes and bring to a simmer.
  4. Stir in heavy cream, salt, and pepper.
  5. Add pasta and enough water to cover. Cook according to pasta package instructions until al dente.
