Ingredients
- 12 ounces penne or rigatoni pasta
- 2 tablespoons extra virgin olive oil
- 2-3 cloves garlic, minced
- 1 (28-ounce) can diced tomatoes
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil, chopped (or 1 tablespoon dried basil)
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- In a large pot, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add canned diced tomatoes and bring to a simmer.
- Stir in heavy cream, salt, and pepper.
- Add pasta and enough water to cover. Cook according to pasta package instructions until al dente.
- Stir in grated Parmesan cheese and basil before serving.
