Instructions

  1. Cook the gnocchi according to package instructions until they float. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add fresh spinach to the skillet and cook until wilted.
  4. Lower the heat and stir in heavy cream, followed by crumbled feta cheese. Mix until the cheese melts and the sauce is creamy.
  5. Add the cooked gnocchi to the skillet and toss to coat in the sauce. Season with salt and pepper to taste.
  6. Serve warm, topped with grated Parmesan cheese if desired.
