Ingredients
- 1 can Rotel tomatoes
- 1 can black beans
- 2 cups cooked chicken, shredded
- 1 cup sweet corn
- 1 cup chicken broth
- 1 packet taco seasoning
- 1 cup cream or cream cheese
- Salt and pepper to taste
- Optional toppings: Shredded cheese, sour cream, avocado, cilantro
Instructions
- In a large pot or slow cooker, combine the Rotel tomatoes, black beans, shredded chicken, sweet corn, chicken broth, and taco seasoning.
- Stir well to combine all ingredients.
- If using the stove, bring the mixture to a simmer over medium heat, cover, and cook for 20-30 minutes, stirring occasionally. If using a Crockpot, cook on low for 4-6 hours. For an Instant Pot, seal and cook on high pressure for 10 minutes, then release the pressure.
- Once cooked, stir in the cream or cream cheese until well blended.
- Season with salt and pepper to taste.
- Serve hot with optional toppings.
Notes
For added freshness, consider using herbs like basil or cilantro. Adjust the spice level with jalapeños or cayenne pepper if desired.
