A comforting one-pot dish featuring tender chicken and creamy Cajun-spiced rice, perfect for busy weeknights.
Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a bowl, coat the chicken breasts with Cajun seasoning.
- Heat olive oil in a skillet over medium heat. Add the chicken and cook until browned and cooked through, about 6-7 minutes per side. Remove and slice.
- In the same skillet, add rice and toast for about 1 minute.
- Pour in chicken broth, bring to a boil, reduce heat, cover, and simmer until rice is tender, about 15-20 minutes.
- Stir in heavy cream and Parmesan cheese until melted and creamy. Season with salt and pepper.
- Serve the sliced chicken over the rice, drizzling with the creamy sauce and garnishing with chopped parsley.
Notes
Use freshly grated Parmesan for better melting. Leftovers can be stored in an airtight container for up to 3 days.
