Ingredients

  • 3 eggs
  • 2 cups sugar
  • 3/4 cup butter (softened)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract (optional)
  • 2 cups all-purpose flour
  • 1 bag (12 ounces) cranberries (fresh or frozen)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9 x 13 baking pan with cooking spray.
  3. In a large mixing bowl, beat the eggs and sugar for about 5 minutes until thick and doubled in size.
  4. Add the softened butter and vanilla extract, mixing until well incorporated.
  5. Gradually mix in the flour until combined.
  6. Gently stir in the cranberries, being careful not to break them.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan before cutting and serving.
