Ingredients
- 3 eggs
- 2 cups sugar
- 3/4 cup butter (softened)
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract (optional)
- 2 cups all-purpose flour
- 1 bag (12 ounces) cranberries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C).
- Spray a 9 x 13 baking pan with cooking spray.
- In a large mixing bowl, beat the eggs and sugar for about 5 minutes until thick and doubled in size.
- Add the softened butter and vanilla extract, mixing until well incorporated.
- Gradually mix in the flour until combined.
- Gently stir in the cranberries, being careful not to break them.
- Spread the batter evenly into the prepared baking pan.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan before cutting and serving.

You can store leftover cake covered tightly with plastic wrap or in an airtight container; it keeps well for a couple of days at room temperature or longer in the fridge.
