A comforting and quick dish combining seared steak with cheese tortellini in a rich creamhouse sauce, perfect for busy families.
Ingredients
- 20 oz cheese tortellini
- 1 lb steak (sirloin or ribeye)
- Salt
- Black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded or freshly grated
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Gather your tools: large skillet, pot for tortellini, sharp knife, and wooden spoon.
- Season the steak with salt, black pepper, garlic powder, and smoked paprika, then let it rest for 5 minutes.
- Boil salted water and cook tortellini according to package directions.
- Heat a large skillet, add olive oil, and sear the steak for 3 to 4 minutes on one side, then flip and sear the other side for 2 to 3 minutes.
- Remove the steak and let it rest, then slice thinly against the grain.
- In the same pan, melt butter, add minced garlic, and sauté for 30 to 45 seconds.
- Add heavy cream and milk, bring to a gentle simmer, then stir in parmesan until melted.
- Season the sauce with salt, cracked black pepper, and red pepper flakes as desired.
- Add tortellini and sliced steak to the sauce, tossing gently to coat.
- Sprinkle with parsley and serve hot.
Notes
For best results, use fresh tortellini. Adjust seasonings based on personal preference. Leftovers reheat well on the stove or microwave.
