A comforting and quick pasta dish featuring chicken, a creamy sauce, and savory spices, perfect for busy families.
Ingredients
- 2 pieces Chicken Breast (Boneless and skinless)
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Garlic Powder (or fresh garlic for bolder flavor)
- 1 teaspoon Onion Powder
- 1 teaspoon Paprika
- 1 teaspoon Dried Oregano (Fresh preferred)
- 1 teaspoon Dried Basil (Fresh preferred)
- 2 tablespoons Olive Oil (or preferred cooking oil)
- 12 oz Penne Pasta (any pasta shape can be used)
- 2 tablespoons Butter (Unsalted preferred)
- 1 cup Heavy Cream (or half-and-half for a lighter option)
- 1/2 cup Parmesan Cheese (Freshly grated is preferred)
- 2 tablespoons Fresh Parsley (for garnish)
Instructions
- Season the chicken with salt, pepper, garlic powder, onion powder, paprika, dried oregano, and dried basil. Let rest for five minutes.
- Bring a pot of salted water to a boil for the pasta.
- In a skillet, heat olive oil and brown the chicken for 4 to 6 minutes per side. Remove from skillet and rest.
- Add penne to boiling water and cook according to package instructions until al dente. Reserve one cup of pasta water before draining.
- In the same skillet, melt butter over medium heat. If using fresh garlic, add it and cook until fragrant.
- Pour in the heavy cream and add half of the parmesan. Stir until melted and slightly thickened.
- If the sauce is too thick, add reserved pasta water to achieve desired consistency.
- Slice the rested chicken and add it to the pasta with the sauce. Stir gently to combine and coat.
- Serve in bowls with remaining parmesan and parsley on top.
Notes
For added brightness, use fresh basil and a squeeze of lemon. Leftovers can be reheated with a splash of milk or cream to restore creaminess.
