Description
A comforting and nourishing coconut curry soup with playful dumplings, perfect for busy weeknights or family gatherings.
Ingredients
- 1 can coconut milk
- 4 cups vegetable broth
- 1 tablespoon curry paste
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 bell pepper, diced
- 2 cups mixed vegetables (carrots, peas, etc.)
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Dumplings (store-bought or homemade)
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and ginger, sautéing until fragrant.
- Stir in the curry paste and cook for another minute.
- Pour in the coconut milk and vegetable broth, then bring to a simmer.
- Add the diced bell pepper and mixed vegetables. Season with soy sauce, salt, and pepper.
- Allow to simmer for about 10 minutes.
- Add the dumplings into the soup and cook according to the package instructions or until they are cooked through.
- Serve hot, garnished with fresh cilantro.
Notes
For a richer soup, add a splash of fish sauce if you’re not keeping it vegetarian. Adjust the curry paste based on your heat preference.
