Description

Ingredients
- 2 cups sugar
- 1/2 cup water
- 2 egg whites
- 1 cup pecans, chopped
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine sugar, water, and salt. Cook over medium heat until it reaches 250°F (hard-ball stage) on a candy thermometer.
- While the sugar mixture is cooking, beat the egg whites in a separate bowl until stiff peaks form.
- Once the sugar mixture reaches the correct temperature, slowly pour it into the beaten egg whites while continuing to beat on high speed.
- Add vanilla extract and chopped pecans, then mix until the mixture holds its shape but is still slightly sticky.
- Drop spoonfuls of the mixture onto a wax paper-lined baking sheet and let them cool completely. Enjoy your delicious divinity candy!
Notes
Use the freshest pecans for the best flavor. Let egg whites come to room temperature for easy beating. It’s best to make this candy on a dry day.
