Description

Ingredients

  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup egg noodles
  • 2 tablespoons ginger, minced
  • 2 tablespoons garlic, minced
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat some oil over medium heat. Add onions, carrots, and celery, sauté until softened.
  2. Add ginger and garlic, cook for another minute.
  3. Pour in the chicken broth, bring to a boil.
  4. Add the noodles and shredded chicken, simmer until the noodles are cooked.
  5. Season with salt and pepper, garnish with parsley before serving.

Notes

For a creamier texture, stir in a quarter cup of milk or a splash of cream at the end. Use rotisserie chicken for convenience, and keep noodles separate for leftovers.
