Delicious chocolate cookies filled with creamy chocolate ganache, perfect for family gatherings and special occasions.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate ganache (for center)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the baking sheet, spaced apart.
- Make an indent in the center of each cookie using your thumb or the back of a teaspoon.
- Bake for 10-12 minutes or until the edges are set.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack.
- Fill each thumbprint with chocolate ganache. Serve and enjoy!
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze for up to three months. Warm them slightly before serving for a fresh-out-of-the-oven feel.
