Ingredients
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 large egg yolk
- 1 cup chocolate ganache (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, cocoa powder, and salt.
- In another bowl, cream the softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg yolk and vanilla extract until well combined.
- Gradually add the flour mixture to the wet ingredients, mixing until combined.
- Roll the dough into balls about one inch in diameter.
- Place them on a lined baking sheet.
- Make a slight indentation in the center of each ball using your thumb or the back of a measuring spoon.
- Bake for 10-12 minutes, watching for golden edges.
- Let cool completely, then fill each thumbprint with chocolate ganache.
Notes
For an even richer taste, use artisanal chocolate for the ganache. Store cookies in an airtight container for up to a week.
