Description
Delightful and healthy Chocolate Strawberry Yogurt Clusters that are perfect for a sweet treat with a nutritious twist.
Ingredients
- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tablespoons coconut oil
Instructions
- Add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract to a large bowl. Combine thoroughly.
- Add scoops of the yogurt mixture (about 2 tablespoons each) to a parchment paper-lined baking sheet to form the clusters. You should be able to make about 10 clusters.
- Place the baking sheet with the yogurt clusters in the freezer. Freeze until they are completely solid, about 1-2 hours.
- Once frozen, melt the chocolate. Combine chocolate chips and coconut oil in a microwave-safe bowl and microwave in 15 or 30-second intervals, stirring until melted.
- Remove the frozen yogurt clusters and dip each one into the melted chocolate, ensuring each is thoroughly coated.
- Place each coated cluster back on the prepared baking sheet, optionally adding a sprinkle of sea salt.
- Return the clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify.
- Enjoy your Chocolate Strawberry Yogurt Clusters!
Notes
Store leftover clusters in an airtight container in the freezer, layered with parchment paper to prevent sticking. The flavors improve if stored overnight.
