Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • 1/4 cup powdered sugar


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, melt the butter. Stir in the granulated sugar and brown sugar until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, cocoa powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until fully incorporated.
  6. Pour the brownie batter into the prepared pan and spread evenly.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs. Allow to cool completely.
  8. Meanwhile, prepare the mousse: melt the chopped chocolate in a double boiler or microwave, stirring until smooth.
  9. In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form.
  10. Fold the melted chocolate into the whipped cream until combined.
  11. Spread the mousse over the cooled brownies and refrigerate until set, about 2 hours.
  12. For the ganache, melt additional chocolate and cream together, and pour over the mousse layer.
  13. Allow to set before slicing into squares and serving.

Notes

Use fresh ingredients for the best flavor, and consider adding a sprinkle of sea salt on top for a gourmet touch.
