Ingredients
- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, melt the butter. Stir in the granulated sugar and brown sugar until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the flour, cocoa powder, and salt.
- Gradually mix the dry ingredients into the wet mixture until fully incorporated.
- Pour the brownie batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes or until a toothpick inserted comes out with a few moist crumbs. Allow to cool completely.
- Meanwhile, prepare the mousse: melt the chopped chocolate in a double boiler or microwave, stirring until smooth.
- In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form.
- Fold the melted chocolate into the whipped cream until combined.
- Spread the mousse over the cooled brownies and refrigerate until set, about 2 hours.
- For the ganache, melt additional chocolate and cream together, and pour over the mousse layer.
- Allow to set before slicing into squares and serving.
Notes
Use fresh ingredients for the best flavor, and consider adding a sprinkle of sea salt on top for a gourmet touch.
