Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 8 oz semisweet chocolate, chopped
  • 1/2 cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Melt the butter and granulated sugar together over low heat. Remove from heat and let cool slightly.
  3. Stir in eggs and vanilla until well combined.
  4. In a separate bowl, mix flour, cocoa powder, and salt. Gradually stir this into the butter mixture until just combined.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs. Allow to cool completely.
  7. For the mousse, heat the heavy cream in a saucepan until it just simmers.
  8. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes, then whisk until smooth.
  9. Allow the chocolate mixture to cool slightly, then fold in the powdered sugar and mix until well combined.
  10. Spread the mousse over the cooled brownies and refrigerate until set, about 2 hours.
  11. Cut into squares and serve with a glossy chocolate ganache drizzle, if desired.
