Ingredients
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1/2 teaspoon salt
- 1 cup heavy cream
- 8 oz semisweet chocolate, chopped
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- Melt the butter and granulated sugar together over low heat. Remove from heat and let cool slightly.
- Stir in eggs and vanilla until well combined.
- In a separate bowl, mix flour, cocoa powder, and salt. Gradually stir this into the butter mixture until just combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted comes out with a few moist crumbs. Allow to cool completely.
- For the mousse, heat the heavy cream in a saucepan until it just simmers.
- Pour the hot cream over the chopped chocolate and let it sit for 5 minutes, then whisk until smooth.
- Allow the chocolate mixture to cool slightly, then fold in the powdered sugar and mix until well combined.
- Spread the mousse over the cooled brownies and refrigerate until set, about 2 hours.
- Cut into squares and serve with a glossy chocolate ganache drizzle, if desired.
