Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet or grease a shallow baking dish.
  3. In a mixing bowl, combine breadcrumbs, Parmesan, parsley, oregano, garlic powder, onion powder, salt, and pepper.
  4. Drizzle olive oil over the mixture and combine until it resembles damp sand.
  5. Pat chicken breasts dry, season with salt and pepper.
  6. Dip each chicken breast into breadcrumb mixture, pressing lightly to ensure even coating.
  7. Place on a greased baking sheet and bake for 25-30 minutes until cooked through and golden brown.
  8. While chicken bakes, prepare the Garlic Herb Cream Sauce: sauté garlic in butter, then add heavy cream and bring to a gentle simmer.
  9. Stir in thyme and lemon juice, simmer until thickened.
  10. Once chicken is done, let it rest before serving with the sauce drizzled on top.

Notes

Make a double batch of sauce for leftovers. The sauce can be stored in the fridge for up to three days.
