Description

A delightful twist on traditional tacos combining chicken, Caesar salad elements, and provolone cheese, perfect for busy weeknights.


Ingredients

  • 1 pound ground chicken
  • 1/4 cup white onion, shredded & moisture squeezed out
  • 2-3 tablespoons cold butter, shredded
  • 2 tablespoons parmesan cheese, grated
  • 2 tablespoons mayonnaise
  • 2 teaspoons garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon lemon zest
  • Kosher salt and ground black pepper to taste
  • 3 cups romaine lettuce, chopped
  • 1/4 cup Caesar dressing (more for serving)
  • 1/4 cup parmesan cheese, shaved
  • 1 tablespoon butter
  • 6 street taco tortillas
  • 6 provolone cheese slices
  • 1/2 cup croutons, crushed

Instructions

  1. In a large bowl, mix together all burger ingredients until fully combined.
  2. Divide mixture into 6 equal balls and freeze for 15-30 minutes.
  3. In another bowl, mix romaine, Caesar dressing, and shaved parmesan, then set aside.
  4. Preheat a flat top griddle to medium-high heat and add 1 tablespoon butter.
  5. Place burger balls on griddle using parchment paper on top and smash them flat with a burger press.
  6. Cook for 40 seconds, seasoning with salt and pepper, then flip and place provolone slices on top.
  7. Toast tortillas on the griddle alongside the burgers for about 1-2 minutes until golden.
  8. Assemble by placing patties on tortillas, adding Caesar salad, crushed croutons, and additional dressing. Enjoy!

Notes

Use fresh lemon for zest if available; it brightens the flavors. Crush croutons just before serving to keep them crisp.
