Description
A delightful twist on traditional tacos combining chicken, Caesar salad elements, and provolone cheese, perfect for busy weeknights.
Ingredients
- 1 pound ground chicken
- 1/4 cup white onion, shredded & moisture squeezed out
- 2-3 tablespoons cold butter, shredded
- 2 tablespoons parmesan cheese, grated
- 2 tablespoons mayonnaise
- 2 teaspoons garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon lemon zest
- Kosher salt and ground black pepper to taste
- 3 cups romaine lettuce, chopped
- 1/4 cup Caesar dressing (more for serving)
- 1/4 cup parmesan cheese, shaved
- 1 tablespoon butter
- 6 street taco tortillas
- 6 provolone cheese slices
- 1/2 cup croutons, crushed

Instructions
- In a large bowl, mix together all burger ingredients until fully combined.
- Divide mixture into 6 equal balls and freeze for 15-30 minutes.
- In another bowl, mix romaine, Caesar dressing, and shaved parmesan, then set aside.
- Preheat a flat top griddle to medium-high heat and add 1 tablespoon butter.
- Place burger balls on griddle using parchment paper on top and smash them flat with a burger press.
- Cook for 40 seconds, seasoning with salt and pepper, then flip and place provolone slices on top.
- Toast tortillas on the griddle alongside the burgers for about 1-2 minutes until golden.
- Assemble by placing patties on tortillas, adding Caesar salad, crushed croutons, and additional dressing. Enjoy!
Notes
Use fresh lemon for zest if available; it brightens the flavors. Crush croutons just before serving to keep them crisp.
