Ingredients

  • 1 pound boneless skinless chicken thighs
  • 1 pound smoked sausage
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 1 cup rice
  • 2 teaspoons Cajun seasoning
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 green onions, chopped
  • 2 tablespoons oil
  • Salt and pepper to taste
  • 2 tablespoons butter


Instructions

  1. Heat oil in a large pot over medium heat until shimmering. Add diced onion, bell pepper, and celery; sauté for about 5-7 minutes until softened.
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Add chicken thighs and sausage, cooking until browned.
  4. Stir in rice, diced tomatoes, chicken broth, and Cajun seasoning.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
  6. Fluff with a fork and garnish with chopped green onions before serving.

Notes

For a lighter version, swap in cauliflower rice. Watch for the golden edges on the chicken for added flavor. Leftovers are great for stuffed peppers or fried rice.
