A comforting and quick weeknight meal featuring roasted potatoes, smoked sausage, and melted cheddar cheese, perfect for busy families.
Ingredients
- 1 pound halal smoked sausage
- 4 cups baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- Optional: 1/2 cup sour cream for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and cut baby potatoes into halves or quarters and pat dry.
- Slice smoked sausage into 1/4-inch rounds.
- In a small bowl, mix ranch seasoning, garlic powder, onion powder, and black pepper.
- In a large mixing bowl, combine potatoes with olive oil and half of the seasoning mix; toss to coat.
- Spread the seasoned potatoes on a parchment-lined baking sheet, leaving space in between.
- Add the sliced sausage evenly on top of the potatoes.
- Roast for 35-40 minutes, stirring halfway through until golden brown.
- Sprinkle shredded cheese over the dish and return to oven for an additional 5 minutes until melted.
- Garnish with chopped parsley if desired and serve hot, optionally with a dollop of sour cream.
Notes
For a crisper result, ensure potatoes have space on the sheet and consider using freshly shredded cheese for better melting. Leftovers can be reheated in the oven or skillet for optimal texture.
